Sweet Beginnings!! Dharwad Pedha
Our first official post!! :) Super excited.. Without further ado, we present to you (drum roll please) . .. . . . Dharwad Pedha !! A delicacy by itself. Ah, how much we missed that taste (well at-least Pooja and I.. :) ). It has been long since we have had this sugary, decadent, creamy and rich sweet. It's like a celebration in your mouth!! For the ones who don't need an introduction to this delicacy, please skip ahead to the ingredients list. While others, please read on..This sweet, is uniquely found in Karnataka, India. As the name suggests, it originates from the city of Dharwad. Wikipedia says, that this it has been around for about 175 years (Wow! that's a long time all right!!). Well so, we never thought it was make-able (is that even English?? ;) ) . But you know what, it obviously is. And best of all, its organic. Well at-least the main ingredients were. So please read-on for the recipe.
This is a time consuming process. We made khoya/ mawa from scratch. If you choose, you may make instant khoya. But, wouldn't taste as good.
Prep time: 10 minutes.
Cooking time: 4 to 5 hours (Majority of the time is taken by khoya prep).
Ingredients:
- Milk, full fat : 1 gallon (We used organic).
- Granulated Sugar: the way your taste bud likes it (powdered works well too, but just beware, it might have some corn starch in it).
- Ghee : 1 cup (We made this ourselves with organic butter)
- Cardamon powder: 1/2 tsp
Method:
- The making of khoya: Pour all the milk into a heavy bottom, deep vessel and start cooking in a medium flame. Stir continuously to make sure, the milk doesn't burn. To stir, i used a wooden spoon (unused, to make sure it doesn't have any flavor lurking in it).
2 hours into stirring
- After about a good 5 hours, we get this.
- Ta-daa !! That is khoya for you all!! At this point, add some ghee and sugar (as much as you would want), roast it till it gets some color. After which, you roll them into small balls. Roll the pedha in sugar and there you have it, Dharwad pedha.!!
It tasted real good. a gallon of milk made quite a quantity. Enough for about 6 greedy people ;). The picture above shows the number of balls we got. We made them a little smaller than a golf ball size.
It tastes even better when you warm it up for about 5 seconds in the microwave before consuming!! Do try it and let us know how it turned out!! Cheers!
