Peanut Butter Cups

This recipe has been long pending! We all love Reese's peanut butter cups but I find them a little salty. Preethi had made peanut butter cups at home and they had come out really great, so I decided to learn it from her. What makes these peanut butter cups great is that the peanut butter is homemade. This is a very quick and easy recipe. Sorry for the lack of pictures, we were happily chatting(you know girls!!) while making it and forgot to click the pictures.


Ingredients:

  •  Roasted peanuts - 1/2 cup
  •  Sugar - to taste (we took around 1/4th cup, can be replaced with honey or jaggery for a healthier option)
  •  Salt - pinch 
  •  Ghirardelli 60% Cocoa chocolate chips - 1/2 cup (You can use any brand and replace with milk chocolate if you like it sweet)
  • Cup cake liners - small size


Method:

  • In a food processor or a mixie jar add the peanuts(should be roasted), sugar and salt and blend them for a minute and scrape the sides and blend again. Continue doing this till you get the desired consistency. Making peanut butter is as simple as that :) :) .
  • Next, in a microwave safe bowl meltthe chocolate chips for 30 secs and mix it. Continue heating for 30 sec intervals till you get a chocolate sauce like consistency.
  • Place cup cake liners on a tray. In each cup cake liner, put a teaspoon of melted chocolate and place a small ball(disk of peanut butter). The diameter of the peanut butter ball should be less than the diameter of the chocolate poured. (Pardon me for the childish drawing but wanted to show how it would look from the top).
  • Pour more chocolate on top to cover the peanut butter completely. Repeat this for as many peanut butter cups you want.



  •  Refrigerate for 30 mins and your peanut butter cups are ready.



Notes:
1. You can use almonds or walnut or a combination of different nuts to make the nut butter.
2. The nut butter can be refrigerated and used with bread, as a dip of fruits etc.
