Brushetta - An Italian starter

My husband and I were driving back from work. Both of us, extremely hungry and of course, neither of us wanted to eat sambar rice which was waiting for us at home :) Wanted to snack on something yummy and cheesy!! I pretty much had all the ingredients I wanted to make the most amazing bruschetta!! By almost, I mean the bread. I wish I had the baguette. But I anyway had a healthier alternative, whole grain wheat bread. You will notice a change in flavor, but it was very insignificant. I think the main contributor is the filling. Although, please don't choose a bitter bread. The more neutral or on the salty side it is, the better. Lets go ahead with the recipe.

I cut a slice of bread into two to give it the baguette look ;)

Looks yummy doesn't it?!!!


Ingredients:
  • 4 slices of you choice of bread ( baguette if you can find one ).
  • 2 Tomatoes (de seeded and chopped).
  • 1/2 tsp of pepper (I like mine spicy)
  • 1/2 tsp of dried oregano and basil (if you have fresh, even better)
  • Burrata cheese (as much as you like ;) )
  • Baby spinach, 10 to 15 of them (this is optional, the traditional recipe doesn't call for this)
  • A garlic clove.
  • 10 kalamata olives, sliced.
  • olive oil, extra virgin.
  • Salt to taste.
Method:
  • Heat up an iron pan and toast the bread using olive oil till its golden brown on both sides.
  • Rub the garlic pod on one side of the toasted bread and keep aside. 
  • In a bowl, combine, 1 tsp of olive oil, cubed burrata cheese, olives, tomatoe, salt, pepper, baby spinach, oregano, basil, salt and mix really well.
  • Top the bread with the above and enjoy!!
It tastes soo amazing, and best of all, takes only about 5 to 10 mins to make. When hungry, I eat 2 slices of bread. So what I mentioned above is good for two people. Try this and let us know how it worked out for you!!
