Masala Puri - bangalore style

Ok now I am just super excited to post this recipe. This excitement, only Bangaloreans will understand. Now, who doesn't love this chaat!! I've been living in the bay area for quite sometime now and we are pampered with a variety of Indian food. But off late I have been craving masala puri, the kind you get in Bangalore.
This dish is made with dried peas gravy, crushed tikki, onion, carrot assembled with sweet and spicy chaat chutney. The secret is in the peas gravy. It tastes so heavenly!! My mouth is like literally watering while writing about this. I have never found a restaurant that prepares masala puri like the streets of Bangalore. Of course, there is Bangalore cafe in Santa Clara. But, it doesn't taste very authentic.
So, I set out in a journey to retrieve the recipe which would make this masala puri taste exactly like the ones you get in the streets if Bangalore. And following is the procedure.

Ingredients:

  • Dried peas : 1 cup, soaked overnight.
  • For the masala paste:
    • Fresh coconut : 1/2 cup
    • Ginger: 2 inches
    • Garlic: 5 cloves (big ones)
    • Mint leaves: 1/4 cup, washed
    • Coriander leaves: 1 to 2 tsp, washed
    • Coriander seeds: 4 tsp
    • Star anise: 2
    • Poppy seeds: 2 tsp
    • Marathi Moggu: 1 tsp
    • Cloves: 1 tsp
    • Cinnamon stick: 2 inches.
    • Dried red chilli: 4 to 5, according to the spice level
    • Green chilli: 4, according to the spice level.
  • Onion: 1/2 medium sized, chopped finely.
  • Oil: 2 tbsp
  • Salt: to taste
Method:
  • Cook the soaked peas with salt, drain and keep aside.
 
  •  Make a paste of the ingredients mentioned in the masala section.
 



  •  In a vessel, add the oil and onions. Saute till its transluscent.


  • Add the masala to the vessel and cook till the raw smell is gone and till toil separates.
  • Now add the water that was used to cook the peas or even fresh water (till a gravy like consistence is formed), add salt and let it boil for about 15 mins in low flame covered. 

  • At this point, your masala is done!! :) This tastes really good. At this point, you can layer the crushed tikki, boiled peas, the gravy, onion, carrot, sweet and spicy chutney and enjoy the dish!!
I like adding the boiled peas into the curry directly. Just saves storing the peas in a different vessel.
I have been waiting for soo long for this recipe. My search for this ends right here. I can satisfy my taste buds right here at home!! ;)
