Guacamole - The perfect recipe

I was introduced to this when I came to USA three years back. I did not know what to expect when it came to its flavor. I had no clue!! Well so my first taste ever was at Chipotle. As soon as I ate it, I fell in love with this!! Trust me, it tastes soo good, you could literally replace it with cheese ;) Well obviously it doesn't taste exactly like cheese!! But its sooo buttery and amazing.
To my surprise, I found out recently that you get this in India too. Its called as "Butter Fruit". Its commonly eaten with sugar. I've been told that its very tasty when consumed like that or even in form of a smoothie. Never tried it though.
This is just another way to prepare Avocado (or butter fruit). It goes really well as a dip (bye bye cheesy dips!!) with chips, mainly tortilla chips. But I think you can eat this with just anything!! The options are endless. 
I have personalized it based on years of experience of making it ;) Perfected it pretty well I should say. And am very proud of it. 

Ingredients:
  • One medium sized Avocado.
  • 1/4 of a large red onion (Depending on how you like the taste of onions).
  • 1 Serrano pepper / jalapeno, de-seeded, chopped finely.
  • 2 tbsp of cilantro, chopped (eyeballing the quantity here, add as much as you like).
  • Juice of half a lime. (or less, depending on how tangy you like this dish).
  • Salt to taste.
 

Method: 
  • Take out the peel of Avocado and keep aside.
  • Add the remaining Ingredients, except lime and salt into a mortar and mash it till the juices of the onions release.

  • Add the above mixture to the peeled avocado and mash it all together. At this point, add salt and lime according to taste.

You should have realized by now, the trick here is to lightly mash the onion so that it releases its juices and when mixed with avocado. And it tastes awesome :) All the flavors would have combined really well!! And all together, they work wonders on your taste buds. 
You can even opt out of using the serrano/ jalapeno. It tastes good with them too. 
This dish must be consumed soon since avocado is the victim to oxidation.
There are several ways to preserve it. 
  1. Add the avocado's pit in the center of your final product. (I've never tried this)
  2. Add a layer of onion peel on top of the guacamole (Ok now I can vouch for this!! It works wonders. Onion is like a shield to guac. I use onion peel. Layer it very well to cover the surface).
